Fantastic Coconut Chicken Curry

My family and I loved this recipe. It was so good and not too difficult to make. I am spoiled in the fact that I have two instant pots so I made rice at the same time I made curry in the second pot. I highly recommend the cilantro if you like cilantro as it gave it a great pop of flavor. If you're one of those poor people for whom it tastes like soap, you can of course use italian parsley or leave it off entirely.
