This was such a fun experiment. I loved using the freeze-dried mashed potatoes. This was for ease more than anything to make the recipe quicker. I do think it was maybe a little softer than it would be if you followed the recipe exactly. I also let a 10-year-old help me boil the gnocchi and my quality control might have been a bit off. The flavor of the soup was spot on though and the gnocchi was still my husband's favorite part so I will take it.
The soup is currently in the freezer I will update with how it rehydrates and how the frozen gnocchi rehydrates if at all that was frozen before boiling.
I love my instant pot if you're interested in trying one out. I use it for meals all the time. I love that it's 8 qt because it allows me to easily double the recipe for freeze-drying. I also have fallen in love with the air fryer option. We use it frequently to reheat food and preserve texture.
